The Martinez is an old classic with many different recipes as the drink has been modified over the generations. I personally prefer an “Old Tom” or “London Dry” gin for this cocktail. Despite its many variations, the Martinez at its core is in the Manhattan family where Gin is used instead of Rye.
Old tom gin refers to a traditional method of distilling gin dating back to the early 1800s in the Netherlands. Most modern makers of old tom gin claim that they are doing it the true traditional way, however many distillers are using different methods. As far as I can tell, old tom gin must be infused with Juniper (and other optional spices) and thats about it. Beyond that, there doesn’t appear to be clear cut rules, just regional traditions. I have tried bottles that are aged, or not. Some that have aded sugar, some not. It is pretty clear that old tom gin today is not what was being distilled and consumed in the early 19th century. Haymans Old Tom gin is my favorite old tom gin that I have sampled, so that is what I prefer for this cocktail.
