Negroni No.2

1.5oz Gin (Fords gin)
1oz Campari
1oz Dolin Dry

Lemon peel garnish

The Negroni No.2 is an easy spin-off on the classic Negroni. Substituting red vermouth for dry vermouth adds an extra bite to this already bitter cocktail.

If you are a true Campari fan, this version might be just what you needed. We recommend using Dolin Dry vermouth in place of the sweet red vermouth. The red vermouth is used to balance the drink and offset the bitter aftertaste with a sweet attack. However, like adding salt to enhance flavor, using Dolin Dry will accent the brightness of the Campari and let the natural bitter amaro shine through.

Another change in this cocktail is the use of crushed ice instead of a large ice sphere. Using crushed ice increases the surface area of the ice changes the rate at which the drink is chilled and diluted.

Recipe
1. Pour gin, Campari, and dry vermouth into mix glass.
2. Stir without ice for a few seconds.
3. Fill an old fashioned glass with crushed ice.
4. Pour the stirred contents over crushed ice, stir twice.
5. Express lemon peel over the glass.
6. Garnish with lemon peel.

Notes:
This version of the cocktail reminds me of Italian restaurants. In my experience the drink is served more bitter, and with crushed ice.
