Pecan Infused Bourbon
Ingredients
12oz Buffalo Trace
1 cup pecans
Salt
Pepper
Mason jar
Infusing bourbon with pecans is one of the easier infusions and a great way to dive into infusions. The pecan infused bourbon makes a great Pecan Old Fashion. In order to achieve a good infusion, give yourself a week of time before you plan on enjoying.
Recipe
1. Soak 1 cup of pecans in cold water for 20-30 minutes. This limits the chalky taste and deactivates enzyme inhibitors, tannic acid, and phytic acid.
2. Strain pecans and pat dry.
3. Spread the pecans across baking sheet and season with healthy portions of salt and pepper.
4. Bake for 20 minutes at 300 degrees F. Stirring 2 or 3 times total.
5. Let the pecans cool to room temperature (do not refrigerate).
6. Once the pecans are cool, add to mason jar with 12oz of Buffalo Trace.
7. Let sit on shelf out of direct sunlight for 7 days.
8. Shake jar once daily.
9. Strain through cheesecloth into measuring cup and pour back into rinsed mason jar for future use.
Notes
Although this is an amazing ingredient in cocktails, it is quite a departure from the Buffalo Trace you poured in the jar. If you were planning on infusing for sipping, you must REALLY like pecans.
