Gin

Ingredients
2oz London Dry Gin (Beefeater)
.5oz Cointreu
.75oz Lemon juice
.25oz Simple syrup
1 egg white

The recipe for the White Lady dates back to 1919 at the Ciro Club in London. The original recipe looked very different than what we now know as this classic gin flip. I have not tried the original recipe myself, but it is said to have lasted 10 years before it was changed in 1929 to the recipe you see here.

This is a relatively simple cocktail with a big flavor! A London dry gin accents the balanced combination between the orange liquor and the lemon. If you have a floral gin on your bar cart, you can also try that to add a bit of botanical flavor to your drink. Regardless of your choice of gin, the foam top evens out the cocktail for a very silky feel.

Recipe
1. Pour all ingredients into a mixing glass.
2. Shake dry for ten seconds to enhance foam.
3. Add ice and shake again until mixer is frosted.
4. Strain over coupe.
5. Be sure to shake out every last drop of foam to even the texture of the foam.
6. Express lemon over foam and garnish the glass with a lemon banner.

Notes:
1. I cannot emphasize enough how important it is to dry shake the cocktail prior to mixing with ice. Dry shaking allows the egg white to absorb the flavors of the ingredients. If you don’t dry shake, the foam may have a good texture still, but will not be as flavorful.
